Bourbon Glazed Candied Bacon

Closest thing to heaven! Every holiday ... A Tuesday brunch ... It's becoming a staple in my household. Bacon is awesome to be begin with. This recipe takes it to a whole new level. Candied bacon! The perfect balance of sweet vs. spicy.  Last year was my first attempt at candied bacon. I found two recipes that weren't quite right. Originally, I used 2 tsp of cayenne red pepper. That was way too spicy. This year, I was going to cut it down to 1 tsp, my sister thought that was still way too much so we tried 1/2 tsp which turned out perfect.    1 lbs Applewood smoked bacon 1 cup packed light brown sugar 1/2 tsp cayenne red pepper 1/2 Tbsp black pepper  2 oz. Jack Daniels Bourbon Line a sheet pan with foil. Place a wire rack on top of the sheet pan. Lay bacon in single layer on the rack. Be careful not to overlap the bacon for even cooking. Smoked Gouda & Spinach Stuffed Pork Chops

This is one of my favorite recipes for pork. The pork chops turn out very moist. The smoked gouda and pork compliment each other quite well. A nice Chenin Blanc would pair beautifully with these stuffed pork chops.  4 (6 oz) thick cut pork chops 8 slices smoked gouda cheese 1/2 pound fresh spinach, rinsed and torn into bite-sized pieces 3 Tbsp horseradish mustard 1 cup breadcrumbs Your favor seasoning for pork, to taste Preheat oven to 400 degrees. Coat 9x13" baking dish with cooking spray. Lay each chop flat on cutting board, and with a sharp knife held parallel to the board, cut a pocket into the pork, leaving 3 sides intact. Stuff each chop with spinach and cheese. Season each chop.  Coat each chop with a thin layer of horseradish mustard and then roll in breadcrumbs. Arrange chops on baking dish.  Bake for 45 minutes until 45 minutes or until golden brown.  Serves: 4

Pasta Carbonara

1 pound linguine or spaghetti 6 strips bacon, diced 4 egg yolks 1 cup grated Parmesan 1/2 teaspoon kosher salt 1/4 teaspoon black pepper 1/2 cup fresh flat-leaf parsley, chopped Directions Cook the pasta according to the package directions. Meanwhile, fry the bacon in a large skillet over medium heat. Transfer to a paper towel and reserve the drippings. In a large bowl, whisk the egg yolks. Still whisking constantly, add 2 tablespoons of the drippings. Working quickly, add the drained pasta and Parmesan to the yolk mixture and toss to combine. Add the salt, pepper, parsley, and bacon. Serve immediately. (The heat of the pasta cooks the eggs, but not thoroughly. It may be advisable for young children, the elderly, and anyone with a compromised immune system to avoid eating this dish.) 4 Servings Source: http://www.realsimple.com/

Black and Tan Irish Mac and Cheddar

My favorite holiday is St. Patrick's Day! My mom's side of the family is Irish so celebrating has always been a tradition in my family. Everything from making corn beef and cabbage to wearing green to drinking a green beer. This year I set out to start my own tradition. I found this recipe and made it for St. Patrick's Day dinner. It was outstanding. Bacon Cheeseburger Pasta

As a true Packer fan I can't help but cheer for the New Orleans Saints in Super Bowl XLIV. After all the Saints are the reason that Favre is home crying, "Do I man up & retire or go 1 more season?" Today I am going to a Super Bowl party and need to bring a dish to pass. I came across this recipe under the heading "Super Bowl Recipes." Very easy to make and delish ... Two main requirements for a Super Bowl Sunday dish. Hope you have a safe and fun Super Bowl Sunday! Go Saints!!!!!!!!!!!!! 8oz pasta 1lb ground beef 6 bacon strips 1 can tomato soup 1 cup shredded cheddar cheese Directions: Fry ground beef and bacon, drain grease. Cook pasta as directed on package and drain. Pour pasta in skillet with beef and bacon. Add soup to skillet and cook until soup is hot. Sprinkle with cheese and cover until cheese is melted.
